Restaurant JUSTE: Iodine bars and shell huts

Why did you set up your restaurant on the Ile de Ré?

My partner, Romain, and I are both from the Ile de Ré. The tip of the Baleines lighthouse is a place I used to frequent a lot when I was young, so I knew of the site’s potential, and then this opportunity came along. We seized the opportunity to set up our brand on the island, having already done so in Paris.

A location at the foot of the Whale Lighthouse isn’t a random choice, is it?

The location resonates with Romain’s and my identity as islanders. But this geographical position is also consistent with the notion of “Cabane à coquilles”, as we like to call our home, more commonly known as Juste. Comfortably seated, a stone’s throw from the ocean that beats to the rhythm of the tides, the Phare des Baleines is a strong marker of the restaurant’s ambience. In itself, it contributes to our customers’ enjoyment of the region’s unique moments, tinged with sea air and a sense of disconnection.

What makes your restaurant unique today?

First of all, our value for money, with our simple seafood menu offering very attractive prices. You can have lunch or dinner for less than 30 euros, with good iodized products and a fine wine list. Then there’s the location itself, which is highly atypical, under the lighthouse, in a place that looks like a private garden. And last but not least, the products on offer, with original dishes from Paris and the Ile de Ré, such as razor clams, blue lobster, homemade tuna rillettes and cockles.

On the menu: lobster, crab, mussels, oysters… There’s plenty to choose from. What do you think of your menu?

Our credo is to offer seafood at an affordable price. So our menu doesn’t change much, because it meets the classic expectations of a clientele looking for simplicity at fair prices. Of course, we do have a few signature dishes, like our stuffed shellfish or our fish burger, for which only we master the recipe…!

Aperitifs and tapas complete the picture. Can you share with us the best order for an after-beach terrace at Juste?

There’s a lot to choose from, but off the top of my head, I’d say let yourself be tempted by a dozen oysters with fleur de sel butter from the Ile de Ré, some sea almonds stuffed with Burgundy snail butter, topped with razor clams in creme persillade, a homemade seaweed tartar and, of course, our smelt fry. All served with our friends’ wine “JUSTE” (just what you need to be happy…).
